Wheat Free Recipes

  
 
 Oatmeal Cookies                        Butterscotch Oat Squares 
 
 4 cups oats                                      ½ cup butter (melted) 
 2 cups brown sugar                             2cups oats 
 1 cup oil                                              1 cup brown sugar 
 Mix together and leave for 8 hours.                  1 tsp. Baking powder 
                                                 1tsp vanilla 
 Add: 2 eggs 
           1 tsp. Almond extract                    Mix brown sugar, baking powder and  oats. 
            almonds and/or raisons                    Add butter and vanilla. Spread  thinly. 
          ½ tsp. salt                                      (2 – 8x8 pans or 1 – 9x13 ) 
 Bake 350  - 15 minutes                           Bake 375 – 10 – 15 minutes. 
 Let cool before removing from pan. 
 
  Carmel Cake                               Protein Bars 
 
 ¼ cup butter                                      3 cups granola 
 1cup brown sugar                                      1cup protein powder or whey 
 1egg                                                ½ cup seeds, nuts or raisons (opt) 
 ½ cup flour*                                      Mix together in bowl. 
 ¼ tsp. salt 
 1 tsp. Baking powder                             Melt together in pot. Do not boil. 
 ½ cup chopped nuts                             ½ cup butter 
 1 cup coconut                                      ½ cup peanut butter 
 Melt butter. Stir in sugar. Let cool.                  ½ cup honey 
 Add slightly beaten egg. Beat well.                   Pour over granola mixture. Press  into 
 Add dry Ingred., nuts and coconut.                   A 9x9 pan.  Refrigerate. 
 Bake 350                    8x10 pan 
 *Note: Other flours such as potato, spelt 
 rice may be used. 
 
  Peanut Butter Balls                      Nut Butter Balls
 
 ½ cup peanut butter                             ¾ cup peanut, almond or cashew butter 
 ½ cup honey                                      ¼ cup honey 
 ½ cup milk powder                             ¼ cup instant soy milk powder or tapioca flour 
 Mix together. Roll into balls. Refrigerate.           ¼ cup raisons 
 May add chocolate chips or roll in coconut         coconut 
 for variety.                                       Let nut butter sit at room temperature. Mix together. 
                                                 Add extra tapioca flour if hard balls are preferred. 
                                                 Roll into bite size balls. Chill before serving.
